- simple green chile sauce -

used as topping for huevos rancheros, tacos, enchiladas, etc...

2 tablespoons oil or lard in a heavy saucepan, saute' 1 clove garlic an 1/2 cup minced onion.  blend in 1 tablespoon flour with a wooden spoon.  add 1 cup water and 1 cup diced green chili.  bring to a boil and simmer for 5 minutes, stirring frequently.
